Lecoque Eggs’ egg mimosa stays tasty, of good structure and has a longer shelf life thanks to HPP. It is the perfect ingredient for the salad and sandwich industry.
HPP doubles the shelf life of cooked, peeled and sliced eggs of Lecoque Eggs up to 48 days. Therefore, Lecoque’s clients have ample time to process the egg mimosa. Founder and owner Jean-Marie Lecoque: “Our customers get an end product they can rely on. The shelf life is guaranteed, as is the quality. Pascal Processing gives us this guarantee on quality through the proper process, timely execution of orders and continuity.” The egg mimosa is processed in bags of five kilograms, a total of six to nine tons per week.
